Culinary Students Tops in Region

Fox Valley Technical College took home the top award at the 2018 Central Region American Culinary Federation (ACF) Student Team Championship in Madison. In addition, the FVTC team was the only one of nine teams from the greater Midwest to receive a perfect score on any single judging part of the experience.  

The FVTC students scored 92% overall as a team, also qualifying their work as the only gold medal performance at the event according to ACF scoring standards. The ACF is the premiere chefs’ organization in North America with more than 17,000 members in over 150 chapters. The perfect score was in the classical dessert portion of the competition. That benchmark is highly-respected because it comes from the world renowned Escoffier cookbook. Each team at the event had to create the same dessert through interpretation of a recipe from the cookbook.

Team FVTC is currently practicing for the right to win the ACF national championship against four other teams in New Orleans in mid-July. The students’ requirement for the national event is the creation of a four-course signature meal along with a cold platter.
